* 1 head of cabbage shredded
* 1 large onion sliced( 1/4 for perfuming oil, 1/2 blended, and 1/4 for garnish)
* 1 habanero chili blended
* 1 large carrot blended
* 4 cloves of garlic blended
* 1 inch square ginger blended
* 8 small egg plants diced (optional)
* 4 cans of tuna in water
* 2 cans of diced tomatoes
* 5 tbsp of extra virgin olive oil
* 1 tbsp Momoni (cured king Mackerel, substitute with fish sauce, or shrimp paste available at oriental stores in the diaspora)
* 1/3 a medium size koobi (salted tilapia) best practice to soak in warm water for no less than 2 hrs to remove most of salt. It helps to prep this ingredient ahead of time.
* 4 white mushrooms (optional)
* 1/2 tsp turmeric
* 1/4 tsp crushed black pepper
* Salt amount per your preference (taste stew for salt when all components are combined and season further as needed)
* 3 tbsp of cold pressed coconut oil for garnish.
Recipe:
Prep cabbage and eggplants by slicing/dicing, and immerse into a brine for approximately 20 mins. This helps to curb that strong ammonia-like odor from cabbage.
Prep other ingredients as follows: blend 1/2 onion with habanero, carrot, garlic, and ginger.
Clean and open canned goods.
In a good size pot, on medium heat, pour in olive oil, Momoni, koobi, and 1/4 sliced onion, and bring to a sizzle to begin releasing their flavours into the oil. Should take 3 minutes.
Then add all blended ingredients, stir, and continue to cook on medium heat for 2-3 minutes with lid on.
Add tomatoes and stir to combine. Cook a further 5-10 minutes.
Add tuna and mushrooms, stir to combine and cook for further 3-5 minutes.
Drain cabbage and eggplants and add to pot, stir to thoroughly combine, place lid on, and cook for 5-8 minutes to wilt cabbage and cook eggplant through to a creamy texture.
Remove lid to allow formed broth to reduce for approximately 5 minutes, and conclude cooking with a drizzle of coconut oil, and 1/4 onion sliced for garnish.
Serve with Ghanaian yams, potatoes, rice, or enjoy the stew by itself. ❤️
